Apples, whether Red Delicious or Honeycrisp or any of the other hundreds of varieties, are arguably at their best when baked into a pie. They retain a bit of their crispness, but they still melt into each other in a warm heap, like the best kind of romantic coupling. Flavored with warming cinnamon and sweetened with just a little sugar, apple pie is one of life’s great comforts.

Winter apples, just out of season, beg to be baked and a hot oven is just the thing you need to warm your bones.

But there are so many ways to bake an apple pie that it can be overwhelming to decide on just one. That’s why you should try all of these. We’ve got a long winter ahead, and that means plenty of time to try them all.
