Overwhelmingly, you responded that you want EASY dinner recipes AND lunch box ideas, but for you! It's not hard to find endless amounts of kids’ lunchbox tutorials, but there's definitely a lack of focus on lunch ideas for grown-ups (you know, the people who are actually spending time shopping and packing them NIGHTLY).

Friends, I've got you.

Not only is today's recipe super simple to throw together, make-ahead friendly, AND a fun twist on a traditional classic... it's the type of lunch that makes you feel good about your life-choices (even after you've eaten it)!

Today, we talk Greek Yogurt Tuna Salad. Let's get the obvious out of the way, YES... this tuna salad is green. YES... I know that green shaded tuna may be initially off-putting. YES... you absolutely MUST start adding avocado to your tuna salad on a regular basis.

Originally, I wanted to call the recipe "Mayo Free Avocado Greek Yogurt Tuna Salad Stuffed Peppers", buuuuut it seemed a little wordy, so avocado lost its accolades. Forgive me?

This isn't your mama's tuna salad lunch-prep. We're going to load our Greek Yogurt Tuna Salad into crispy multi-colored baby bell peppers. They're cute, packable and most importantly ... we're replacing carb-heavy bread with veggies (you won't mind a bit, promise).

How Do You Make Greek Yogurt Tuna Salad Stuffed Peppers (No Mayo)?

Sound fancy + wholesome, don't you think? In reality, it couldn't be easier.

First: Use a food processor or blender to make your mayo-free Avocado and Greek Yogurt dressing.

Next: Add 2 packs of StarKist Selects E.V.O.O.® Yellowfin Tunaand 1 pack of StarKist Selects E.V.O.O.® Yellowfin Tuna with Sun-dried Tomato to a mixing bowl.

Then: Pour the mayo-free avocado and Greek yogurt dressing into the mixing bowl.

Finally: Mix the sauce into the tuna and pile the finished product into crispy baby bell peppers.

What Type of Tuna Should I Use To Make Greek Yogurt Tuna Salad (No Mayo)?:

I always use StarKist Selects E.V.O.O.® Yellowfin Tuna. It contains 3 recognizable ingredients (Yellowfin Tuna, E.V.O.O. and salt), is Wild Caught and has a really tender texture + mellow flavor (thanks to the cold-pressed E.V.O.O.). Trust me, you can taste the difference!

What type of yogurt should I use to make Greek Yogurt Tuna Salad (No Mayo)?:

Any type of Greek yogurt will work. Do make sure to purchase GREEK yogurt. Traditional yogurt cannot be subbed for this recipe. Your tuna salad will have a runny consistency.

I don't like bell peppers. Can I substitute a different veggie?

Of course! The bell peppers are just a suggestion, albeit a fantastic one 😜. You can load the finished tuna salad into a tortilla, enjoy it with carrot and celery sticks, crackers or even eat it straight from the bowl. The goal is flexibility.

Can Greek Yogurt Tuna Salad be made dairy-free?

It can, although you will have to change the name since dairy filled Greek Yogurt is a main component. Just double the amount of avocado and eliminate the yogurt all together. The result will still be delicious!

Is Greek Yogurt Tuna Salad Whole30 compliant?

Yes. It can be! To make this recipe Whole30 compliant, just eliminate the Greek Yogurt and double the amount of avocado.

Can Greek Yogurt Tuna Salad be made ahead of time?

You bet! Full disclosure, you may notice a bit of discoloration, but the taste isn't affected. I like to wait until the morning of to actually slice the baby bell peppers as they may lose some of their crispness if sliced too early.

Description

Greek Yogurt Tuna Salad Stuffed Peppers (No Mayo) are simple to make, requiring just basic pantry ingredients and about 10 minutes prep.

Instructions

  1. To the bowl of a food processor, add avocado, yogurt, garlic, lemon juice, dijon mustard, salt and pepper.
  2. Pulse on high until dressing is smooth. You may need to scrape the sides of the food processor with a rubber spatula halfway through. Once mixed, taste and adjust seasoning as needed.
  3. Place the tuna into a medium sized mixing bowl. Add dressing slowly while simultaneously mixing. You may not need to use all of your dressing depending on the texture you prefer you tuna salad to be. Mix until tuna is fully coated.
  4. Place 1-2 Tbs. of tuna into each of the halved baby bell peppers. Serve immediately or store in the refrigerator for up to 24 hours.
